Recipe Wednesday, Anyone?

It didn't go over so well the last time I hosted Recipe Wednesday, but since Rabid Runner requested, we will try it again. My recipe for today is...

Macaroni Grill's Penne Rustica
(w/o the shrimp)




Ingredients:
12 oz. grilled chicken breast (marinate in olive oil and garlic salt overnight, then grill on barbecue for best flavor)
½ pack thick bacon
48 oz. (3 boxes) penne pasta
2 large red bell peppers- diced
1 cup grated parmesan cheese
½ tsp paprika

Gratinata Sauce:
2 tsp butter
2 tsp chopped garlic
1 cup marsala wine
OR
1/3 cup apple juice + 2 tbsp red wine vinegar +
enough chicken broth to equal 1 cup
1 tsp dijon or dry mustard
1 tsp salt
1 tsp chopped rosemary
¼ tsp cayenne pepper
8 cups heavy cream


Directions:
Sauté garlic in butter in large pan. Add marsala wine, mustard, salt, rosemary, cayenne pepper, and heavy cream.

Cook pasta according to directions. Cook bacon. Slice chicken into medium-bite size pieces.

Combine sauce, cooked pasta, diced chicken, cooked bacon, bell peppers, parmesan cheese, and paprika and mix thoroughly.

Spread in pans.

Top with chopped rosemary and mozzarella cheese.

Bake @ 475 for 10 minutes.

If frozen, thaw in refrigerator the day of. Cover with foil and bake @ 375 for 1 hour. Remove foil during the last 15 minutes.

Number Of Servings: Yields one 8x8 and two 9x13 casserole dishes.

Preparation Time: More than an hour

This recipe is delicious. I usually make when I am taking a friend or neighbor dinner, or hosting family dinner at my house since it makes SO much!

If I was at home and had my favorite recipes at hand I would post. This made me miss the good ol' days when I worked at the Mac Grill. Yummy...

Sounds like a lot of work to me but it sure looks good!

Banana Cake

2 1/4 c flour
1 1/2 c sugar
1 1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt

Mix above together, then add

1 c mashed ripe bananas (about 3)
3/4 c buttermilk*
1/2 c butter
1 tsp vanilla
2 eggs

Bake at 350 for 35 minutes in grease 13x9 pan. Cool completely and top with creme cheese frosting (not necessary but very good).

*If you don't have buttermilk, add 1 T of vinegar to milk and let it sit for 10 minutes.

Yummy. Mandee, I think I'm going to have to have surgery or an injury of some sorts so you can bring me some Penne Rustica! I love to grill in the summertime so here's a yummy fajita recipe.

Grilled Chicken Fajitas

1/3 cup olive oil
1/3 cup fresh lime juice
2 garlic cloves, pressed
1 tsp chili powder
1/2 tsp salt
1 1/2 lbs chicken breast halves
2 medium green or red peppers
1 medium white onion
8 flour tortillas (or wheat, if you prefer that healthy stuff :) )

Toppings:
salsa
grated cheese
sour cream
guacamole

1. For marinade: Combine olive oil, lime juice, garlic, chili powder, and salt in a small bowl; whisk until blended. Place chicken in a ziplock bac. Add 1/3 cup of the marinade to chicken. Seal bag and marinate in refrigerator for 30 minutes.
2. Cut up peppers and onions into 1/4 inch thick strips. Grill chicken and vegetables over medium coals for 12-15 minutes; turn once. Baste chicken and veggies with remaining marinade during the last 2 minutes.
3. Wrap tortillas in heavy aluminum foil; place on grill to warm 5-7 minutes. Slice chicken into strips.

Best Oriental Salad Ever!
2 Pkgs. Broccoli Slaw
1 bunch green onions
--mix and set aside

1 cup pecan pieces
1 cup slivered almonds
1/2 cup sunflower seeds
1/2 cup sesame seeds
2 pkgs ramen noodles crushed
3 boneless skinless chicken breasts
(you can grill or broil them, or just buy the ones already cooked) Cut up into bite size pieces

Dressing:
1 cup sugar
1/2 cup canola oil
1/3 cup apple cider vinegar
2 tbsp. soy sauce

Put 2 TBSP of butter in large skillet, add crushed noodles. LIghtly brown the noodles then add the pecans, almonds and contin. until they are lightly browned. Add sunflower seeds and brown, then add sesame seeds for a few seconds. Cool and store in Plastic Bag.
Mix the chicken with the slaw and onion mix.
Wait until right before serving to add the noodle/nut mix to the slaw mix. Add the dressing and serve.

P.S. This makes a ton of salad. You can cut it in half if you want. I don't ever add my dressing to the mix unless I know there won't be much leftover. This salad is good for a few days if you don't mix the dressing in with all of it.

P.P.S. I love that you have done this Recipe Wednesday. I am always looking for good things to cook, even though I really don't cook.

This is a yummy coffee cake / dessert that is quick, easy and everyone loves it.

Streusel Blueberry Buckle

Blueberry Buckle
2 cups all-purpose flour
3/4 cup sugar
1/2 cup milk
1/4 cup butter or margarine softened
1 egg
2 tsp baking powder
1/2 tsp salt
1/2 tsp nutmeg
1 cup fresh or frozen blueberries

Streusel Topping
1/2 cup sugar
1/3 cup all-purpose flour
1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 cup butter or margarine softened

Preheat oven to 375. In large mixer bowl combine all blueberry buckle ingredients except blueberries. Beat at low speed, scraping bowl often, until well mixed (1 to 2 min). By hand, fold blueberries into batter. Spread into greased and floured 9" sq. baking pan.

In small bowl stir together all streusel ingredients except butter. Cut in butter until crumbly; sprinkle over batter.

Bake for 30-35 minutes or until wooden toothpick inserted into center comes out clean.

Favorite dessert:

Berries with Hot White Chocolate

*Frozen berries (just get the big bag from Costco)
*White chocolate
*Heavy cream

1. Melt chocolate in double broiler over stovetop. Add a bit of cream to thin it out just a wee bit.

2. Pour melted chocolate over frozen berries in individual serving cups (DO NOT UNTHAW BERRIES).

3. Go to heaven.

OH MY GOSH.

** and the best thing is that you have insta-dessert whenever someone comes over. You actually don't even HAVE to add any cream - but don't add milk or water or something because your chocolate will seize up!

my mom just told me that she used evap. milk to thin it and it works just as well.
